Jeweled Basmati Rice with Pomegranate & Warming Spices

This fragrant rice dish brings beauty and brightness to the table. Pomegranate adds a sweet-tart jewel tone while gently supporting digestion and vitality.

Serves 4

Ingredients

  • 1 cup white basmati rice

  • 2 cups water

  • 1 tablespoon ghee or coconut oil

  • 1 cinnamon stick or ¼ teaspoon ground cinnamon

  • 3–4 green cardamom pods, lightly crushed

  • Pinch of salt

  • ½ cup fresh pomegranate seeds

  • 2 tablespoons chopped pistachios or almonds (optional)

  • Fresh mint or cilantro for garnish (optional)

Instructions

  1. Rinse basmati rice until water runs clear. Soak for 15–20 minutes if time allows.

  2. Bring water, rice, cinnamon, cardamom, ghee, and salt to a boil. Reduce heat, cover, and simmer for 15 minutes.

  3. Remove from heat and let rest, covered, for 5 minutes. Fluff gently.

  4. Fold in pomegranate seeds and nuts just before serving.

  5. Garnish with fresh herbs if desired.
